Vegetarisch eten saai? Wat mij betreft niet. Met groenten kan je zoveel kanten op. Het is bijvoorbeeld heerlijk om van een stuk (rode) kool een soort vegetarische steak te maken. Zeker als je de kans hebt om deze vacuüm te marineren, dan trekken alle smaken er heerlijk in! Heb je geen vacumeer machine? Laat de steak dan een nacht in de koelkast marineren, dan trekt de smaak er ook aardig in.
Ingrediënten
- 3 grote scheppen kerstpunch (zie recept)
- 2 laurierblaadjes
- 2 el olijfolie
- Flinke snuf zout
Bereiding

Snijd de rode kool in plakken van circa 1,5 centimeter dik.

Verdeel de rode kool over de vacumeerzak en voeg daar de kerstpunch, laurier en olijfolie aan toe. Voeg ook een flinke snuf peper en zout toe.

Zuig de rode kool vacuum en gaar de rode kool sous vide in een stoomoven van 88 graden of een waterbad van circa 90 graden voor 2 uur. Je kunt het waterbad ook nabootsen door een rijstkoker te gebruiken of door een pan op zeer laag vuur net onder het kookpunt te houden. Gebruik dan ook een thermometer om de temperatuur in de gaten te houden. Zorg ervoor dat deze niet hoger van 92 graden komt.

Serveer de rode kool als ‘koolsteak met bijbehorende saus’ als vegetarisch gerecht of snijd de kool bijvoorbeeld door de helft en serveer als bijgerecht.
Als je de kool als vegetarisch hoofdgerecht serveert kun je hem aankleden met geroosterde pastinaak of knolselderij. Wat gegrilde kikkererwten met ras el hanout en fijngehakte lavas(maggikruiden)
